Pumpkin Bar Recipe
This pumpkin bar recipe is so easy to whip up and yet it's sooooo good! It would also make great Halloween party fare for the kiddies. In fact let the kiddies help make 'em.
The frosting is a bonus.
Pumpkin Bar Recipe
4 eggs
2 cups sugar
2 cups (No. 303 can) pumpkin
3/4 c. (1 1/2 sticks) butter, melted
2 c. unsifted flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. Pumpkin pie spice*
1 c. chopped nuts (I prefer pecans!)
Preheat your oven to 325 degrees.
In large mixing bowl, mix eggs, sugar, pumpkin and butter. Sift together flour, baking powder, soda and cinnamon. Add to batter, stir in nuts. Pour into greased 15 1/2 x 10 1/2 x 1-inch pan and bake for 25 minutes.
Cool in pan on wire rack.
*You can make your own pumpkin pie spice by combining the following:
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
Pumpkin Bar Recipe Frosting
1 (3 oz.) pkg. cream cheese, softened
6 Tbsp. (3/4 stick) butter
1 tsp. Vanilla extract
1 Tbsp. half and half
3 c. unsifted powdered sugar
Combine all frosting ingredients. Beat at low speed until smooth. Spread on cooled bars and cut in 2 x 2-inch squares.
This pumpkin bar recipe makes about 34 squares.
