Pumpkin Chocolate Chip Cookie

This Pumpkin Chocolate Chip Cookie is great any time of year but it's especially nice in the fall.

It makes a great Halloween cookie and would be great with pumpkin pie at Thanksgiving.

Pumpkin Chocolate Chip Cookie

2 cup flour
1 cup oatmeal
1 1/2 tsp. Salt
1 tsp. baking soda
1 tsp. ground cinnamon
1 cup butter
1 cup sugar
1 cup brown sugar, firmly packed
1 egg, slightly beaten
1 tsp. Vanilla
1 cup solid pack pumpkin
2/3 cup semi-sweet chocolate chips

Preheat oven to 350 degrees.

Combine the flour, oatmeal, salt, baking soda and cinnamon and set aside. In a large bowl cream the butter thoroughly. Gradually add the sugar and brown sugar and beat until light.

Add the egg and vanilla. Alternately add to the butter, dry ingredient mixture and pumpkin. Add the chocolate chips.

With the aid of a small spatula, drop 2 tablespoons dough for each cookie on lightly greased cookie sheet and bake for 18 minutes or until lightly brown.

For larger cookies use 1/4 cup measure and bake 20 to 22 minutes. Yield: 30 small cookies or 19 large cookies.

Optional decoration: Decorate with 2 chocolate chips before baking.

Icing:

1/4 c. boiling water
1 tsp. Butter
Confectioners sugar
Vanilla or rum flavoring

In a small bowl combine the boiling water and butter. Stir in enough confectioners sugar until the mixture is thick enough to spread. Beat thoroughly. Flavor with vanilla or rum.

The icing is nice but even without it this recipe makes a great Pumpkin Chocolate Chip Cookie.
