Pumpkin Cookies are delicious!

When most people think of pumpkins it's usually pumpkin pie or jack-o-lanterns. But pumpkin makes great cookies. They are great straight from the oven or warmed in the microwave.

Pumpkin is native to the Americas.

Most of the world was unaware of this beautiful vegetable until Europeans started settling there.

The Native Americans were kind enough to introduce them to pumpkins and the many ways to use them.

I'm not sure if pumpkin dishes were served at the first Thanksgiving or not but most surely they were. Native Americans harvested pumpkins in the fall and stored them for winter use. Even today we think of pumpkin during the fall months.

You can certainly make pumpkin cookies from freshly harvested pumpkin in the fall, however canned pumpkin is available year around and there's no reason to serve pumpkin just at Halloween, Thanksgiving and Christmas.

Most cookie recipes that call for pumpkin are usually soft, moist and cake like with the taste of pumpkin and subtle spices. Delicious!
