Pumpkin Oatmeal Cookies

Pumpkin Oatmeal Cookies could become your favorite oatmeal cookie. You can use canned pumpkin or make your own pumpkin puree for this delicious cookie.

Pumpkin Oatmeal Cookies Recipe

Ingredients:

1 cup Canned Pumpkin
1 cup Sugar
1 3/4 cups Rolled Oats
1 Egg (beaten)
1 1/2 cups Flour
3/4 cup Shortening
1 cup Raisins or Chopped Nuts
1/2 teaspoon Baking Soda
1/4 teaspoons Nutmeg
3/4 teaspoon Cinnamon
1 teaspoon Salt

Directions

Preheat your oven to 400 degrees.

In a mixing bowl, stir together the flour, sugar, baking soda, cinnamon, nutmeg and salt. Add the shortening and mix until the mixture is crumbly.

Stir in the egg, pumpkin, oats and raisins (or nuts).

Drop by cookie scoops of dough onto an ungreased half sheet pan. Bake the cookies about fifteen minutes or until done.

Personally I like to use both the raisins and the chopped nuts together. You get a good texture contrast with the chewy raisins and the crunch of the nuts. Give a try to this Pumpkin Oatmeal Cookie.
