Pumpkin Spice Cookie

This Pumpkin Spice Cookie Recipe is not only easy but also oh so good. The fact that it uses Spice cake mix makes it easy. All you have to do is add the pumpkin and some pumpkin pie spice.

Cake mix cookies are extremely kiddy friendly so let them pitch in. They will remember your cookie baking sessions forever.

Pumpkin Spice Cookie Recipe

1 (18.25 ounce) package spice cake mix
1 (15 ounce) can solid pack pumpkin
1/2 tsp pumpkin pie spice

Preheat oven to 350 degrees F (175 degrees C). Line half sheet pans with silpat mats.

In a large bowl, stir together the cake mix, pumpkin pie spice and pumpkin until well blended. Drop by cookie scoop onto the prepared half sheet pans.

Bake for 8 to 10 minutes in the preheated oven. Allow the cookies to cool on the half sheet pans for 5 minutes before removing to a wire rack to cool completely.

These cookies will have a gooey texture if they are under baked!

This recipe certainly doesn't need anything else but if you like you can add chocolate chips and nuts.
