Quick and Easy Cookie Recipe

This quick and easy cookie recipe makes melt in your mouth pecan cookies. You just won't believe this much flavor comes from four ingredients. Basically it's a brown sugar meringue cookie.

Quick and Easy Pecan Clouds Cookies

Ingredients

2 egg whites
1 teaspoon vanilla extract
3/4 cup packed light brown sugar
2 cups pecan halves

Directions

Preheat your oven to 250 degrees F. Lightly grease a cookie sheet.

In a large, squeaky-clean glass or metal mixing bowl beat the two egg whites to soft peaks. Gradually add the packed brown sugar. Continue to beat until the whites form stiff peaks.

Stir in the vanilla extract and the pecan halves. Drop by mounded spoonfuls onto the prepared cookie sheet.

Bake for 1 hour in the preheated oven. Turn off the heat and allow the cookies to remain in the oven at least another 30 minutes. The centers of the cookies should be completely dry.

I always make these cookies when I make egg noodles so I can use up the egg whites that I don't use in the noodles. I double the recipe because I always have four egg whites leftover.

Even a double batch doesn't last long however. These cookies are just soooo good!

My friends and family love them too. I pass out pecan cloud cookies as gifts at Christmas time.
