Recipe for Shortbread Cookies

out of the oven.
This quick and easy recipe will make the perfect accompaniment to your morning coffee or an after
school cup of milk.

Recipe For Shortbread Cookies
Ingredients
2 cups all purpose flour
1 cup unsalted butter, very soft
1/4 teaspoon kosher salt
1/4 teaspoon baking powder
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
4 tablespoons granulated sugar
Directions
Preheat the oven to 350F. Lightly coat a 9 inch round cake pan with shortening or cooking spray.
Sift together the flour, baking powder, kosher salt and confectioners' sugar. Whisk the vanilla extract into the softened butter, then stir the mixture into the flour with a wooden spoon. You should have a fairly stiff dough - pat it evenly onto the bottom of the prepared cake pan.
Lightly prick the dough with a fork. Sprinkle the top with the granulated sugar and bake in the preheated oven for 30 to 35 minutes, or until golden brown on top. Cut the cookies into wedges while they are still warm, then cool completely on wire racks.
Shortbread cookies can be stored for 4 or 5 days in a tightly covered container.
Food For Thought - For a festive look, use colored sugars for the top of the cookies. You can also cut the cookies into straight bar shapes by using a square baking pan.
