Heavenly Scottish Shortbread Recipe
Ingredients
2 cups unsalted butter, softened
1 cup granulated sugar
4 cups all purpose flour
2 teaspoons cornstarch
Directions
Preheat the oven to 325F.
Sift together the flour and cornstarch, then set it aside.
With an electric mixer, cream the butter until it's light and fluffy. Add the sugar and beat until creamy.
Slowly add the flour mixture to the beaten butter and mix it in well. Press the dough into an ungreased jellyroll pan that's 11 x 15 x 1 1/2 inches.
Bake the dough for about 30 to 35 minutes, until lightly golden on top. Take the pan out of the oven and score the dough into bars or diamond shapes, using a pizza wheel or the tip of a sharp knife. Cut the cookies while still warm and cool on wire racks.
Food For Thought - Here's a California twist on this Scottish recipe - add 2 tablespoons of grated orange zest to the granulated sugar before adding to the creamed butter. Your house will smell heavenly!
