Seven Minute FrostingSeven minute frosting is a cooked frosting which makes it a little more complicated than some of the other recipes here. But it's still easy and widely used because of its versatility. It gets its name from the fact that it's beaten in a double boiler over heat for seven minutes. Total prep time is actually longer than that but it's still quick. Seven Minute Frosting Recipe2 egg whites, unbeaten Combine all the ingredients except the vanilla in the top of a double boiler. Beat 1 minute with electric mixer or rotary beater and place over boiling water; beat constantly until frosting forms peaks, about 7 minutes. Remove from the stove. Add the vanilla. Beat until of spreading consistence, about 2 minutes. Chocolate Frosting: Use above recipe. Fold in 3 squares Baker's unsweetened chocolate, melted and cooled, with the vanilla. Do not beat. Sea Foam Frosting: Use the seven minute frosting recipe. Substitute 1 1/2 cups firmly packed brown sugar for 1 1/2 cups white granulated sugar.
