Soft Gingerbread Cookie Recipe
Gingerbread is traditionally a Christmas time thing but this Soft Gingerbread Cookie Recipes should be enjoyed any time of the year. "It’s almost worth baking this gingerbread cookie just for the smells that come from the oven."
Soft Gingerbread Cookie Recipe1 c. molasses 1 c. buttermilk 1 Tbsp. ground ginger 8 Tbsp. Shortening 3 c. flour 1 tsp. baking soda
Preheat your oven to 375 degrees. Melt the molasses, shortening and ginger together and blend. Beat 10 minutes by hand, or 3 to 4 minutes with an electric beater. (Begin with all ingredients warm.) Dissolve the baking soda in a tablespoon of boiling water and add to the molasses mixture, mix thoroughly and then add the flour, folding in just enough to make a good stiff batter, which can be rolled. Use enough flour on board to keep dough from sticking and roll to about 1/4-inch thickness. Cut out the cookies with a cutter of your choice and bake in a moderate oven (375 degrees) for 10 to 12 minutes. This cookie recipe makes approximately five dozen cookies.
