Soft Sugar Cookies

Use this Soft Sugar Cookies recipe and take a step up from plain sugar cookies. These soft, buttery treats are scented with exotic cardamom and lightened with whole milk.

The results are cookies that are soft yet chewy, and are the perfecto cookie for an office coffee break or as delicate tea cookies. Make some ahead and freeze them in a tightly covered container - the freshly baked ones will disappear so fast you might need to start counting cookies!

Soft Sugar Cookies

5 cups all-purpose flour
1 cup (2 sticks) unsalted butter, softened
2 1/4 cups granulated sugar
2 large eggs
1 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 teaspoons ground cardamom
1/4 teaspoon kosher salt
1/2 cup milk

Preheat the oven to 375F. Lightly coat cookie sheets with cooking spray or vegetable shortening.

With an electric mixer, cream the softened butter with 2 cups of the granulated sugar. Add the eggs, 1 by 1, and beat after each addition.

Whisk together the flour, baking soda, baking powder, kosher salt and 1 teaspoon of the cardamom. Gradually add this mixture to the creamed butter and sugar, alternating with the milk, until all the ingredients are well incorporated.

Mix together the remaining half teaspoon of cardamom and the remaining 1/4 cup granulated sugar.

Drop the dough be teaspoonfuls into the sugar-cardamom mixture, then place them on the prepared cookie sheets, about 2 inches apart.

Bake in the hot oven for 10 to 12 minutes, or until they are lightly browned. Cool the finished cookies on wire racks.

Food For Thought - This is a good recipe for kids to help out with. If the spoonful of dough in the sugar cardamom mixture is too unwieldy for little hands, let them drop the dough directly on the cookie sheets then sprinkle the cardamom sugar over them.
