Strawberry Scones

Strawberries and whipped cream are a great combination. Try serving strawberry scones with a dollop of whipped cream on top. Delicious! Any of these three recipes will do nicely.

Strawberry Scones Recipe

1 cup Strawberries
2 1/2 cups All-purpose flour
3 tablespoons Sugar
2 teaspoons Baking powder
1/4 teaspoon Salt
6 tablespoons Butter
2/3 cup Milk

Preheat oven to 425 degrees. Cut the strawberries into 1/2 inch pieces and set aside.

In a large bowl mix together the flour, sugar, baking powder and salt. Add butter. With pastry blender or 2 knives cut in the butter until mixture resembles coarse crumbs. Stir in reserved strawberries and toss well to coat.

Add the milk all at once. With a fork, lightly toss together until the mixture holds together. With floured hands gently form into a ball. On a floured board with floured rolling pin roll out dough 1/2 inch thick. Cut the dough into 2 1/2 inch circles with floured biscuit cutter. Place on greased cookie sheet.

Bake until golden, about 12 minutes. Serve warm with whipped cream.


These scones have a surprise inside!

Surprise Strawberry Scones Recipe

2 cups All-purpose flour
3 tablespoons Sugar - divided
1 tablespoon Baking powder
1/2 teaspoon Salt
1/4 cup Butter cut up
2/3 cup Milk
1 large Egg - beaten
1/3 cup Strawberry jam

Preheat oven to 425 degree F. Grease cookie sheet.

In a large bowl combine the flour, 2 tablespoons sugar, and the baking powder and salt. With a pastry blender or 2 knives, cut in the butter until the mixture resembles coarse crumbs.

Stir in the milk and egg until the dough just holds together. Divide the dough in half. Roll one half into 8-inch circle and transfer to prepared cookie sheet.

Spread strawberry jam on the top leaving a 1-inch border. Roll the remaining dough half into an 8-inch circle and place on top. Press edges lightly to seal.

Sprinkle with remaining 1 tbsp. sugar. Cut into 8 wedges but do not separate. Bake 20 minutes. Makes 8 strawberry scones.


These also have a surprise but these scones are baked in a cake pan.

Raisin Strawberry Scones Recipe

2 cups All-purpose flour
2 tablespoons Sugar
1 tablespoon Baking powder
1/4 teaspoon Salt
1/2 cup Butter
1/2 cup Milk
2 Eggs - beaten
3/4 cup Sun-Maid Raisins
1/2 cup Thick strawberry jam

Heat oven to 425'F. Grease an 8" round cake pan.

Combine the flour, sugar, baking powder and salt. Using a pastry blender or a fork cut in the butter until the mixture resembles coarse crumbs. Add the milk, eggs and raisins and stir just until the dry ingredients are moistened.

With floured hands pat half of the dough into the bottom of greased pan. Press the dough 1/4" up the sides. Spread the dough with jam. Top with the remaining dough and spread evenly. Using a sharp knife score dough into 8 wedges. Brush the top lightly with melted butter and sprinkle with sugar, if desired.

Bake at 425 F. for 20-25 minutes or until toothpick inserted in center comes out clean. Serve strawberry scones warm with a dollop of whipped cream.

Surprise your family with a batch of strawberry scones for breakfast some morning.
