Sugar Cookie Icing
Sugar cookie icing is what sets an ordinary cookie apart from a cookie celebration. With just some sugar, coloring and a few other ingredients you can create a cookie for any occasion.
For that matter you don't have to have an occasion. Who wouldn't like to receive a happy face cookie just for no reason?
Before I say any more about sugar cookie icing I would like to be more specific about what I mean when I say icing.
Icing and frosting are used interchangeably in the cookie world but in my world frosting stays soft and icing hardens into a shiny glaze.
This characteristic makes it quite different from frosting even though both are great items.
However I'm not adamant about it and you will see recipes here that say icing when by my definition they're really frosting.
Frosting stays soft because the primary ingredients are butter or shortening and sugar. Icing on the other hand is sugar and usually egg white or meringue powder.

Icing gives a longer-lasting finish to cookies than frosting does and often is used to decorate cookies used as ornaments and decorative items such as gingerbread houses.
Since icing dries to a hard finish iced cookies are also easier to store since they can be stacked or bagged.
Sugar Cookie Icing Techniques
Applying icing to cookies is not a difficult process. It's as easy as spreading a thin layer over the surface of the cookie and then allowing it to dry and set up.
However you can let your creative side take over and decorate cookies with icing any way you desire.
One of the easiest ways I know of to create interesting designs is to first coat the cookie with a thin layer of icing and then before it dries dot the surface with another color.
Use a toothpick to swirl the second color into the first color. All the cookies will be unique and the kiddies just love doing this.
When I make happy face cookies I spread the cookie with yellow icing and allow that to dry. Then I create the eyes and mouth with black icing from a squeeze bottle.
You can also use a squeeze bottle to drizzle icing onto your cookies. I use a cooling rack over paper towels for easy cleanup.
