White Chocolate Macadamia Nut Cookie
The combination in this white chocolate macadamia nut cookie is truly heaven on earth. Whoever thought of putting white chocolate and macadamia nuts together in a cookie deserves a star! Light and chewy, this is an old fashioned, made from scratch cookie that can be frozen if necessary, perfect for when things get hectic. Canned macadamia nuts often come salted, and if that's all you can find, then go ahead and use them. But do try to find unsalted nuts - this recipe has a small pinch of salt in the batter and unsalted would definitely be better. White Chocolate Macadamia Nut Cookie RecipeIngredients2 cups all purpose flour Preheat the oven to 350F. Lightly grease 1 or 2 cookie sheets with shortening or cooking spray. Cream the butter with the brown sugar and granulated sugar until smooth and creamy with an electric mixer. Add the vanilla extract and the egg. Beat until well blended. Slowly stir in the flour, salt and baking soda. Stir in the white chocolate chips and chopped macadamia nuts. Drop the batter by teaspoonfuls onto the prepared cookie sheets. Bake about 10 minutes in the preheated oven. The edges should just be beginning to turn light brown. Let the cookies rest on the sheet pans for a few minutes, and then transfer them to wire racks to cool completely. Good To Know - You can make some substitutions to customize your cookies. Nothing says you can't use regular chocolate chips and walnuts if you want to use them in this recipe. You can also adjust the ratio of nuts to chocolate. For real chocoholics, add a scant 2 cups of white chocolate chips and only 1/2 a cup of macadamia nuts. That should keep your cravings under control for a little while!
