Yellow Cake Mix Cookie

Pillsbury plus yellow cake mix makes a great Yellow Cake Mix Cookie. The varieties of cookies you can make with it are infinite. The following recipes are a good starting point.

Yellow Cake Mix Cookie Bars

1 pkg. Pillsbury Plus yellow cake mix
1/4 cup water
2 eggs
1/4 cup soft butter or oleo
1/4 cup brown sugar
1 (12 oz.) pkg. Chocolate chips
1/2 cup nuts

Combine the dry cake mix with the water, eggs, butter and brown sugar and mix thoroughly. Stir in the chocolate chips and nuts. Spread in greased, floured jelly roll pan, 15 1/2 x 10 1/2 x 1-inch (I use a cookie sheet). Bake 20 to 25 minutes at 350 degrees. Cool and cut into bars.

Orange Raisin Cookie

1 pkg. Pillsbury Plus yellow cake mix
1/2 cup oil
2 eggs
2 cup rolled oats
1 cup raisins
1 (11 oz.) can mandarin oranges, chopped and drained

Grease cookie sheets. Combine the cake mix, oil and eggs and blend until smooth. Stir in the oats, raisins and oranges. Drop by teaspoons on cookie sheets. Bake at 350 degrees for 12 to 15 minutes. Makes 4 to 5 dozen.

Chocolate Chip Cookie Bar

1 box yellow cake mix (with pudding)
1/3 cup melted margarine
1 egg

1 egg
1 tsp vanilla
1 can Eagle Brand milk
1/2 pkg. butterscotch chips
1/2 pkg. chocolate chips
1 cup chopped nuts

Mix the cake mix, margarine and 1 egg and pat in 9 x 13-inch pan. Mix the topping and pour over the cake mixture. Bake at 350 degrees for 40 minutes. Cool and cut.

Peanut Butter Autumn Spotlights Yellow Cake Mix Cookie

1 pkg. Pillsbury plus yellow cake mix
1/2 cup peanut butter
1/4 cup softened margarine or butter
1/4 cup water
2 eggs
1 cup Reese's peanut butter pieces

Heat oven to 350 degrees. In a large bowl, combine the cake mix, peanut butter, margarine, water and eggs and stir until well blended. Fold in the candy pieces. Drop by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets. Bake 8 to 12 minutes or until light golden brown. Immediately remove from the cookie sheets. Makes 3 1/2 dozen.

Sandra's Yellow Cake Mix Cookie

1 (18 oz.) Pillsbury Plus yellow cake mix
2 (3 oz.) boxes regular butterscotch pudding
4 oz. pecans, chopped
1 1/2 cups mayonnaise (not salad dressing)
4 oz. walnuts, chopped
12 oz. pkg. chocolate chips

Mix with slotted spoon the cake mix and pudding mix. Stir in by hand the mayonnaise, nuts and chocolate chips. Drop by teaspoons onto ungreased cookie sheet. Bake 12 to 14 minutes at 350 degrees. Let cool on cookie sheet 5 minutes or until a little firm; then cool on wire rack. Store in airtight container. Makes a big batch.
